This recipe is so easy, it’s like a walk in the park on a sunny, spring day. It takes literally a minute to prepare, 6-8 minutes to cook, and you’ve got a great low-carb meal. Unless you serve it with crusty bread.
Grilled Avocados with Parmesan Cheese
3 ripe Haas avocados (1/2 per person)
1/2 cup parmesan cheese
Salt and pepper
2 tbsp. grapeseed oil
Fresh limes wedges
Cut and pit your avocados, leaving the skin on. Brush the flesh with oil, season with salt and pepper. Place on a clean hot grill, 2-3 minutes per side, until warmed through, flesh side first. Then flip avocados to skin side and top with Parmesan cheese.
Remove avocados after 3 minutes, and cheese has melted. Serve with lime wedges and crusty bread.
