I saw a recipe on Pinterest, but didn’t like the recipe. (Am I the only one who does that?) But it gave me great inspiration for this recipe, a new one…. it’s so good. I hope you enjoy these great cookie bars.

Toffee Cookie Bars
1/2 cup butter
1 cup brown sugar
1 tsp. vanilla extract
1 1/2 cups flour
1 tsp. baking soda
1 cup rolled oats
3/4 cup mini chocolate chips
1 cup Heath Toffee bits
1/2 cup shredded coconut
1/2 cup chopped pecans
Cream together butter and brown sugar until light and fluffy. Add egg and vanilla extract, and stir until combined.
Gently combine dry ingredients, flour, baking soda, oats… and then add to your wet mixture.
Fold in 1/2 cup mini chocolate chips. Press dough into a 1/2 size bar pan, lined with parchment paper. Top with remaining chocolate chips, toffee bits, shredded coconut and pecan pieces.
Bake at 350 degrees for 20-22 minutes, remove and cool completely before cutting into squares.
