A new cupcake- Chocolate Cheesecake Fondue

Yum. These cupcakes have 2 of my favorite ingredients. Ganache and cheesecake. Let’s say that again just for fun. Ganache and cheesecake. I did cheat- I bought the cheesecake- didn’t want to bake too much since my stomach is still a bit sensitive to say the least these days.

So since these cupcakes really don’t need an introduction- here’s the great recipe. Happy Baking!

Chocolate Cheesecake Fondue Cupcakes

1 box dark chocolate cake  mix

3 eggs

1 cup milk

1 tsp. vanilla extract

24 1″ squares of cheesecake, (bought is fine)

1 cup heavy cream

16 oz. semi sweet chocolate chips

Chocolate Butter Cream Frosting

In a medium bowl, place chocolate chips. Heat your heavy cream until simmer, then pour over the chocolate chips and let stand for 2 minutes. Stir until a thick chocolate forms. As the chocolate cools, it will become thicker. You can place it in the fridge for 20 minutes until it scoops into a ball shape.

In a separate bowl, stir together the cake  mix, eggs, milk and vanilla extract. Scoop batter into paper liners filling 2/3 full. Set aside. Scoop a small teaspoon of the chocolate mixture into the cake batter. Repeat until each cupcake batter has a scoop of ganache inside. Bake at 350 degrees for 12-15 minutes.

Remove from the oven and cool completely. Frosting the Chocolate Butter Cream Frosting, top with cheesecake and drizzle some ganache on top for garnish. Delish!
