Artichoke Cheesy Bread

Is there anything better than cheesy garlic bread? I think I may have found something that is pretty darn good. I put my lovely Artichoke Dip on top of a huge slice of french bread, placed it in a very hot oven and here you have it. Artichoke Cheesy Bread. Plain and simple, this bread could legally be a dinner rolled into one recipe. It’s got protein (cheese). It’s got vegetables (artichokes) and it has some carbs (french bread). See?

I served it along side some grilled chicken, buttered pasta and a BIG green salad because I was feeling a little guilty.

Artichoke Dip

2 cups diced artichoke hearts, drained

2 cups cheddar cheese

1 cup parmesan cheese

Salt and pepper to taste

1/2 tsp. garlic salt

1 cup sour cream

1 cup mayonnaise (do not use miracle whip folks)

Mix all ingredients together in a large bowl. Try not to lick your fingers. That is what spoons are made for.

Simply spread the dip generously on top of a huge slice of french bread and place in a preheated oven at 400 degrees for 15 minutes or until hot and bubbly. Feeds 6-8 people.
