I love potato soup. But my kids have always turned up their noses at the thought of soup- of any kind. I knew this recipe needed to be really flavorful and filling… simple and be an easier meal- considering there is a new baby on the way. Making my life as simple as possible right now it the goal.
This soup is perfect in every way. And I can keep the ingredients on hand for that crazy day of the week when I have no time left or energy to make dinner.
Loaded Baked Potato Soup
1lb bag of frozen country style hash browns
3 cups chicken broth
1 pint heavy cream
2 cups diced ham or cooked bacon
Salt and pepper to taste
1 cup shredded sharp cheddar cheese
Sour cream for garnish
Caramalized onions (optional)
Place the hash browns and chicken broth in your crock pot. Cover and cook on high for 3 hours. Add cream, ham or bacon, season with salt and pepper to taste. Stir in cheddar cheese and caramalized onions if desired. Cover and heat on low to melt the cheese until ready to serve. Top with sour cream, chives or anything else you want. Makes 8-10 servings.
