Another recipe inspired from the home style meals I’ve been craving. It’s a great meal- and you can always make a double batch and freeze one for another night. I always mash my potatoes- none of the instant potatoes for me. But if you want a short cut, instant works just fine. It’s a family favorite at our house. I serve it with a fruit or green salad and rolls.
1 onion, chopped
1 lb. lean ground beef
3 carrots, peeled and cut into 1” chunks
1 tablespoon dried parsley
½ teaspoon thyme
1 tablespoon soy sauce
1 cup cheese, grated
2 cups mashed potatoes
1 can tomato soup
In a large skillet, brown onion and ground beef until done. Add carrots, seasonings, soy sauce and soup. Mix well to combine all flavors. Pour into a large baking dish. Cover with mashed potatoes and then cheese. Bake at 350 for 30 minutes until heated through and bubbly.
