After 13 years of marriage, I just learned that my husband does not love pizza. In fact he’d rather not eat it. Seriously? I make pizza all the time. The kids and I love it. How did I miss that? (AND.. He also does not like spaghetti, or baked potatoes. I knew about the spaghetti, but the baked potatoes is a new one to me as well. He’s crazy!)
Back to the recipe. I had some leftover chicken and BBQ sauce from some sandwiches I had made earlier that week. Who loves leftovers, raise your hand? Me! Especially when I can reinvent them into something new. A non leftover dish that everyone will love. Except my husband. But he will eat it with a smile on his face and tell me it was delicious. Because he loves me.
I shared with you my trusty pizza crust recipe a short time ago, you can find it here. I had this made from start to finish in less than 30 minutes, and that is a must when you have a new baby in the house. Time is oh, so precious.
BBQ Chicken Pizza
2 cups cooked chicken, cut in pieces or shredded
1 cup BBQ sauce
2 1/2 cups Monterrey Jack cheese
1/2 cup blue cheese
Authentic Pizza Crust (here)
Preheat your oven to 450 degrees. Press or roll your authentic pizza dough into a greased baking sheet or large stone. Mix together your chicken and BBQ sauce until the chicken is well coated. Spread evenly on top of the crust. Top with the cheeses and bake for 15-18 minutes until the cheese is bubbly and the crust is golden brown. Remove from the oven and cool for about 10 minutes. Cut and enjoy!
