Raspberry German Pancakes

I wanted to make something special- and my kids are spoiled with hot breakfast, most days of the week. I didn’t have enough time to make individual pancakes, so I made my German Pancake recipe ( which I know by heart) and added some raspberry pie filling to the bottom before the batter. It was divine. I hate to admit, but our little family polished off the entire 9×13 dish. The possibilities are endless… apple pie filling, lemon curd, blueberry….. any flavor you like would taste great. In fact, I’ve been asked for Apple German Pancakes next. Yum!

Raspberry German Pancakes

6 eggs

1 cup flour (all-purpose)

1 cup milk

1 tsp. vanilla extract

Pinch of salt

1/2 cup butter, melted

2 cups Raspberry pie filling

In your blender, mix together eggs, flour, milk, vanilla, and salt until smooth. Place melted butter in your 9×13 dish, then place your pie filling evenly. Pour the pancake batter on top and bake at 350 for 20-23 minutes. Pancakes will be cooked through and golden around the edges. Dust with powdered sugar just before serving. Great with warm maple syrup too.
