Spanish Chicken Nachos

My mouth is drooling just thinking of the flavor burst you get with each bite of these nachos. I’ll cut to the chase and give you the recipe- it’s worth it’s weight in gold.

3 cups chicken breast strips, cut into bite sized pieces

2 cups grated Monterrey Jack cheese

1 cup black beans (I am in love with these from Honeyville Farms )

1 cup green olives stuffed with pimento

2 tbsp. butter (everything is better with butter)

1 tsp. smoked paprika

1 tsp. cumin

1/2 tsp. garlic powder

1 tsp. chili powder

Toss your chicken strips with the spices and saute in the butter until cooked through, but still tender. Layer your chips in a baking dish. Top with cheese, black beans and olives. Top with cooked chicken. Bake at 400 degrees for 10 minutes until cheese is melted and nachos are warmed through.
