Looking for a way to use your Zucchini? It’s strange, that this year, we’ve planted 3 Zucchini plants. Two have died so far. I’m hoping this one grows. So far, so good. Who kills zucchini? Never mind.
Zucchini Cheddar Fritters
2 cups shredded zucchini
1 cup sharp cheddar cheese, grated
1/4 cup Parmesan cheese, grated
1/4 cup all-purpose or whole wheat flour
Salt and pepper to taste
Olive oil for frying
Stir together all zucchini, cheeses, flour, and egg. Season with salt and pepper. Heat oil in a large skillet on medium heat. Use a medium cookie scoop to place batter into the hot oil. Cook for 1-2 minutes until golden brown. Flip the fritter and cook on the other side until golden brown and done all the way through. Yum. Remove the fritter and place on a paper towel lined plate. Serve warm. Makes 6 servings.
