Brown Sugar Peaches and Cream Tart

Utah peaches. Peaches. End of summer. I had to create a yummy dessert for us to enjoy. It is a requirement. A super easy treat for your BBQ this weekend. Or any weekend. I can’t get enough peaches, so I planted a peach tree last year. It’s been a little slow in growing, but I have about 17 peaches to harvest in about 1 week. Why is it so hard to wait?

Brown Sugar Peaches and Cream Tart

3/4 lb. butter, soft

2/3 cup sugar

2 3/4 cups all purpose flour

1 tsp. almond extract or emulsion

Stiff whipped cream

Sliced peaches

1/4 cup packed light brown sugar

Cream together butter and sugar until light yellow and fluffy. Add the almond extract. Slowly add the flour, 1/2 cup at a time until completely mixed together. Do not over mix the cookie dough. Press down in a buttered tart pan or spring form pan. Bake at 350 for 18-20 minutes until the sides are golden brown. Remove from the oven and cool completely. Top with whipped cream, sliced and peeled peaches. Sprinkle with brown sugar just before serving. Yum.
