Simple recipes are what I’m after. I had a leftover bottle (about 2 cups) of homemade cranberry jelly left over from Thanksgiving. I simply couldn’t wait until next year to eat it either. I added 1 tbsp. of grated orange peel to the cranberry and 1/2 tsp. of cinnamon. Then I spread it onto a ready made pie crust ( I love the Pillsbury brand) leaving about 1 1/2 inches for folding. Folded the edges over the cranberry filling and dusted with some sugar and baked in the oven at 400 degrees for 25 minutes. Let cool, and topped some fresh sweetened whipped cream with some lemon peel in that as well. Delish.
