Mexican Slaw


This slaw will be making our menu for Cince de Mayo.

It’s super delicious, hearty and oh, so yummy. I could eat it just with a grilled salmon fillet, or with some enchiladas. It would be good all by itself too.

Mexican Slaw

1/2 head medium red cabbage, sliced into shreds

1/2 small red onion, sliced

1/2 cup cilantro, chopped

Salt and pepper to taste

1/3 cup red wine vinegar

1/3 cup granulated honey (or honey)

1/4 cup olive oil

Whisk together the vinegar, honey and olive oil. Add the cabbage, red onion and cilantro. Toss to coat evenly. Season with salt and pepper and let stand for at least 1 hour. Serves 6.
