Tilapia with Spinach and Coconut Sauce

This recipe is so easy, and a little bit Island inspired. I got it from a friend who got it from a friend. And so I’m sharing it with you because I loved it. I mean, who doesn’t love fish cooked in coconut milk with spinach? Really?

Tilapia with Spinach and Coconut Sauce

4-6 tilapia fillets, mine were still frozen

1/2 lb. fresh spinach

1/2 medium sweet onion, sliced

Salt and pepper to taste

Garlic salt to taste

1 can (about 12 oz) lite coconut milk

1/2 cup lite mayonnaise

Place your spinach on the bottom of a 9×13 lightly buttered baking dish.

Then place your fish, making sure it all fits, slightly over lapping if needed. Season the fish.

Then place the onions on top of the seasoned fish.

Then mix together the coconut milk and the mayonnaise, and pour generously over the top of the fish.

Bake covered in a 400 degree oven for 25-30 minutes until the spinach is swimming in the sauce with the fish. Serve over rice.
