Lemon Gooey Butter Cake

How many things can you make with a cake mix? A lot.

Here’s my recipe for Lemon Gooey Butter Cake.

Lemon Gooey Butter Cake

Crust:

1 recipe yellow cake mix

1 egg

1/2 cup melted unsalted butter

1 tsp. lemon extract

1 tbsp. grated lemon zest

Cream together all ingredients until a thick dough forms. Press the dough into  a 9×13 baking dish forming a crust. Set aside.

Filling:

8 oz. cream cheese softened

3 1/4 lb. powdered sugar

2 eggs

1 tsp. lemon extract

8 tbsp. softened butter

1 tbsp. grated lemon zest

Cream together cream cheese, sugar, eggs, lemon extract, and butter.

Pour the filling over the crust and spread to make the topping even. Then bake at 350 degrees for 35-45 minutes. The topping will be golden, and somewhat soft. Remove from the oven and cool completely. Cut into slices, and serve. Keep uneaten (if you have any) portions in the refrigerator, covered up to one week.
